Watching ice cream churn in a cloud of liquid nitrogen is absolutely mesmerizing and Smitten Ice Cream in San Francisco knows no other way. With seven locations already open around California, owner and chief “brr-ista” Robin Fisher is quickly taking over the Cali ice cream scene.
Despite her rapid success, Fisher’s creations come from humble beginnings. After quitting her job, she started selling ice cream on the street out of a wagon. Soon, she began working with an engineer to build her dream machine. In order to incorporate fresh ingredients without sacrificing their integrity, the only way to churn it was cold as could be -321° to be exact.
